BLAST BACTERIA OUT INTO THE COLD
Infrico1, Spain’s leading manufacturer of commercial refrigeration, has launched a new dual purpose blast chiller to help caterers retain food quality and leave bacteria out in the cold.
The heavy duty Infrico Blast Chiller both rapidly chills and freezes, taking temperatures down as low as 18ºC in just four hours, ensuring food stays as fresh as humanly possible.
With the ability to shock freeze, soft chill and hard chill, the fan-assisted chiller also honours the integrity of food by preserving its quality, aroma, colour, humidity and consistency.
Crucially, it has HACCP built in, allowing caterers to print reports to check the chiller has not fluctuated from the correct temperature, which can seriously compromise food safety.
General manager Andrew Macdonald said, with new European legislation requiring all commercial kitchens serving hot food to blast chill to meet food safety rules, caterers needed equipment that was reliable and made to a first class specification.
“It doesn’t matter whether you are a large hotel or a small fish and chip shop, ideally you will need to blast chill food, but it’s a bit of a minefield when it comes to choosing the right equipment. Our new blast chiller, which rapidly transforms liquid in food into micro-crystals of ice that leave the cell structure intact, factors everything in for ultimate peace of mind.
“Frozen food is making a real comeback as research proves it is just as good for you as fresh, with figures compiled by Horizons FS for the British Frozen Food Federation (BFFF) showing that the restaurant sector alone spent almost £1.1bn buying frozen food in 2009, with 86 per cent of this spend coming from Quick Service Restaurant (QSR) operators.”
The upshot is, if food is heated to 100ºC, bacteria will not survive. If food, however, reaches 52ºC or less, bacteria will start to multiply quickly. Blast chilling means caterers can reduce temperatures to 4ºC in less than two hours, protecting food and a business’ reputation.
If refrigerating, the Infrico Blast Chiller will take food heated to 70ºC down to 3ºC in less than 90 minutes. When freezing, it will drop the temperature as low as -18ºC in four hours.
